I have a ten (nearing eleven) year old daughter who also loves animals and enjoys crafts. Here are some sites that she might be interested in:

PackOFun.com (this is a magazine with arts and crafts, I believe you can access some of them at the website)
NWF.org (The National Wildlife Federation-they have magazines for children called Your Big Backyard and Ranger Rick, usually with stories and activities related to animals and nature.
Check out the zoo websites-many have live webcams.
We recently learned of the Kakapo, a bird only found in New Zealand. It was thought to have been extinct at one time, but a colony was found a couple of decades ago and they are trying to help improve their numbers. Perhaps she could learn more about it? It is an "owl parrot". It has the face of an owl, the coloring of a parrot, and it does not fly.
Perhaps she could learn about China, along with the history of the Olympics? Maybe she could learn more about her favorite Olympic sport?
The internet is so full of opportunity. Animal Planet is another good site.
